Ginger Hearts For Your Little Loved Ones

Ginger heart cookies

Although Valentine’s Day is traditionally a day for lovers, it’s also a great day to remind your kids how much they mean to you.

A little note or a special treat are nice surprises to receive in the middle of their day so don’t forget about the little people in your life this Valentine’s Day.

Make these Ginger Heart cookies and sneak them into their lunch boxes tomorrow with a little mommy or daddy love note to tell them how special they are.

Ginger Hearts

Makes approximately 36 cookies
Preparation Time: 20-30 minutes
Baking Time: 10-12 minutes

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 3 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • Pinch ground cloves
  • 85g (6 tablespoons) unsalted butter, softened
  • ½ cup dark brown sugar
  • 1 egg
  • 1 tablespoon molasses
  • ¼ cup coarse sugar crystals
  1. Preheat the oven to 350°F.
  2. In a large bowl, mix the flour and spices together.  In a separate bowl, cream the butter and brown sugar until light and fluffy, and add the egg, beating well.  Stir through the molasses.  Fold this mixture through the flour and spice mixture until well combined.
  3. Using your hands, gather the dough into a ball.  Roll out the dough between two sheets of parchment or wax paper to a thickness of ¼ inch.  Using a heart shape cookie cutter (or shape of your choice), cut shapes from the dough and sprinkle evenly with coarse sugar.  Transfer to a baking tray lined with parchment paper and bake for 12 minutes or until golden.  Remove from oven and cook on a baking rack.
