February 12th is Pancake Tuesday!
I love pancakes and trying new pancake recipes! My kids love pancakes! My husband does not. Too bad for him…because I make some mighty tasty ones (I think he must have had a bad first impression pancake or something because I have no idea how he cannot like pancakes)!
While I am certain that I like pancakes and enjoy pancake Tuesday, I couldn’t actually be certain about why the celebration exists so I did quick internet search and am happy to share.
Q: What is Pancake Day?
A: Pancake Day (also known as Shrove Tuesday) is the last day before the period which Christians call Lent.
Q: Why are Pancakes eaten on Shrove Tuesday?
A: Lent is a time of abstinence, of giving things up. So Shrove Tuesday is the last chance to indulge yourself, and to use up the foods that aren’t allowed in Lent. Pancakes are eaten on this day because they contain fat, butter and eggs which were forbidden during Lent.
So there you have it.
There are so many recipes I could post, but I thought I would share my current favourite (I love these pancakes because they are hearty) as well as one that was recently posted on the momstown Oakville message board and seemed unique.
Scottish Oatmeal Pancakes
1 1/4 cups whole wheat flour
3/4 cup Bob’s Red Mill Scottish Oatmeal
2 tsp baking powder
1/2 tsp baking soda
1 1/2 cups buttermilk
2 eggs, beaten
1/4 cup butter, melted
Mix everything together! If the batter becomes too thick, add a bit more buttermilk. You can add blueberries or mashed banana if desired. Makes 12 pancakes.
Ricotta Oat Bran Pancakes
1 c whole wht flour
3/4 c oat bran (can use wheat bran)
1/4 c brown sugar
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 c light ricotta (drained)
1 c milk
1 tsp vanilla
4 tbsp of veg/canola/safflower oil (pour a couple tbsp in batter, rest to coat pan)
Mix dry and wet ingredients separately. Combine ingredients together and mix well. Use 1/3 cup to measure out batter.
